Kombadi Vade (Chicken & Puri) is a type of Chicken Curry which is popular all over Maharashtra. <br /> <br />Ingredients: <br /> <br />For Chicken Curry: <br /> <br />500 gms Chicken <br />1 Cup Coconut Milk <br />1 tbsp Ginger Garlic Paste <br />1/2 tsp Turmeric Powder <br />1 tbsp Mix Masala <br />2 tbsp Oil <br />1 inch Cinnamon <br />4 Cloves <br />10-12 Black Pepper <br />1 tbsp Coriander Seeds <br />1 tbsp Poppy Seeds <br />2 Onions, chopped <br />1/2 Cup Grated Coconut <br />2 tbsp Oil <br />Water <br /> <br />For Vade: <br /> <br />4 tbsp Urad Dal <br />1 tbsp Cumin Seeds <br />10-12 Fenugreek Seeds <br />2 Cup Rice Flour <br />1 Cup Gram Flour <br />1 Cup Wheat Flour <br />1/2 tsp Turmeric Powder <br />2 tbsp Oil <br />Salt taste <br />Water <br />Oil for frying <br /> <br />Method: <br /> <br />To Make Chicken Curry <br />- Marinate the chicken pieces with ginger garlic paste, turmeric powder, mix masala & salt. Keep it aside for sometime. <br />- In a pan heat some oil. Add cinnamon, cloves, clack pepper, coriander seeds, poppy seeds, onions & grated coconut. <br />- Saute everything for sometime. <br />- Transfer it into a mixer grinder. Add little water and grind everything to a smooth paste. The masala paste is ready. <br />- To make the gravy in a pan heat some oil. Add the masala paste & marinated chicken. Add water & let everything cook for 15-20 mins on a medium flame. <br />- Add coconut milk & let everything simmer. <br />- Chicken is ready. <br /> <br />To Make Vade <br />- Soak the urad dal, cumin seeds & fenugreek seeds overnight in water. Next day grind everything to a smooth paste. <br />- In a large bowl add rice flour, gram flour, wheat flour, turmeric powder, the paste,oil & salt. Mix everything. <br />- Add little water and make a soft dough. <br />- Make small size balls of the dough. <br />- Flatten the balls on plastic sheet. <br />- Deep fry the vada in hot oil till golden brown spots appear. <br />- Enjoy the delicious Kombadi Vada.
